Roman Punch

• 1/4 kilo pineapple ice cream
• 1 champagne bottle
• sugar
• 1 cup pineapple
• a few tsp campari
• white wine


Make the drink and then add the ice cream on the top. Garnish with orange peel.

The Apple Cinnamon

• 2 oz cranberry juice
• 4 oz chilled apple cider


Fill a wine goblet with ice. Add 2 oz. cranberry juice and 4 oz. chilled apple cider. Stir to mix. Garnish with a cinnamon stick.

Calypso Coffee


  • 1 1/2 oz dark rum
  • 1/2 oz Tia Maria or coffee liqueur
  • 4 oz hot coffee
  • 1 oz whipped cream
  • 1/2 oz simple syrup (optional)
  • Ground cinnamon or nutmeg for garnish


  1. Brew a fresh cup of hot coffee.
  2. In a heatproof glass or mug, add the dark rum and Tia Maria.
  3. Pour the hot coffee into the glass and stir to combine.
  4. If you prefer your coffee sweeter, you can add the simple syrup and mix well.
  5. Carefully float the whipped cream on top of the coffee by pouring it over the back of a spoon.
  6. Sprinkle ground cinnamon or nutmeg on top of the whipped cream for garnish.
  7. Serve immediately and enjoy your delicious Calypso Coffee!
